Sweet Potato Waffles
** Makes about (8) 3" Diameter Waffles**
These waffles are a great addition to any Whole30 plate. You can replace your hamburger bun with a sweet potato waffle or pair it with a serving of salmon!
You can make these waffles to taste either “savory” or “sweet”! The only difference is the spices you will use.
What you’ll need:
1 & ½ large sweet potatoes (~ 20 oz)
2 Tbsp vanilla almond milk
¼ tsp salt
¼ tsp pepper
1 tsp thyme
¼ tsp salt
1 tsp cinnamon
First, you will need to skin the potatoes. I recommend using a paring knife for this. Cut off the ends of the potato and then cut the potato in half. Set the larger flat side on the cutting board and use the paring knife to skin the potato from top to bottom. Make sure to cut away from yourself to prevent any accidental cuts.
Next, steam the potatoes. This can be accomplished several ways. You can do this on the stove in a pot, in a skillet, or in a steamer.
Once soft, use a fork to mash the potatoes in a medium sized bowl.
Add the eggs and almond milk.
Plug in your waffle maker so that it has time to heat up.
Add your spices based on your preference of savory or sweet.
Generously grease your waffle pan. I recommend using ghee, coconut oil for the sweet, or olive oil for the savory.
Depending on the size of your waffle maker, you will have to determine how much of the mix to add to the pan. I have a 3” diameter mini waffle maker and I added a heaping ¼ cup of the mixture.
Close the lid once your mixture is added. Cooking time will vary based on waffle maker size. I would recommend 5-10 minutes. You may have to experiment with this at first. The sweet potatoes are very moist so it is important to give them enough time to brown on the outside to avoid splitting when opening the waffle maker.
